Ingredients
Crust
- 1 cup pitted Medjool dates
- ½ cup dried mulberries
- ¼ cup unsweetened shredded coconut or extra dried mulberries (omit coconut for fat-free)
Vanilla Ice Cream Layer
- 3 frozen bananas
- 1 tsp pure vanilla powder or alcohol-free vanilla extract
- ¼ cup unsweetened coconut milk or almond milk (optional; omit for fat-free)
- 3 tbsp pure maple syrup
- ½ tbsp freshly squeezed lemon juice
Wild Blueberry Ice Cream Layer
- 2 frozen bananas
- ¾ cup frozen or fresh wild blueberries
- 1 tsp pure vanilla powder or alcohol-free vanilla extract
- ¼ cup unsweetened coconut milk or almond milk (optional; omit for fat-free)
- 3 tbsp pure maple syrup
Topping
- ½ cup fresh blueberries
- 1–2 tbsp pure maple syrup or raw honey (optional)
Directions
- Line the bottom of an 8- or 9-inch springform pan with parchment paper.
- Make the crust: process dates, mulberries, and coconut (or extra mulberries) until smooth. Press into pan with wet hands. Freeze.
- Make vanilla layer: blend bananas, vanilla, milk (if using), maple syrup, and lemon juice until smooth. Pour over crust. Freeze.
- Make blueberry layer: blend bananas, wild blueberries, vanilla, milk (if using), and maple syrup until smooth. Spread over vanilla layer. Freeze 2–3 hours until set.
- Top with fresh blueberries and drizzle of maple syrup or honey. Slice and serve.
Serves 4–6
Tips
- For fat-free: use extra mulberries in crust and omit coconut/almond milk in ice cream layers.
- Substitute frozen blackberries or raspberries if wild blueberries are unavailable.
- Let slices soften for a few minutes before serving for extra creaminess.
